Recipes to Enjoy

I have loved food since I was young.  My mom made wonderful dishes.  It wasn't until after I was married with kids, I took a stab at actually cooking.  We survived off of Ramen and tv dinners the first year we were married.  As the years went on, I experimented with baking, and years later, main dishes.  I wanted to share some of my favorite treats and meals to share with your own family.

Peanut Butter Bars

 1 1/2 c. butter (softened)                     1 1/2 tsp. soda
1 1/2 c. sugar                                        3/4 tsp. salt
1 1/2 c. brown sugar                            1 1/2 tsp. vanilla
2 eggs                                                    3 c. flour
1- 1 1/2 c. peanut butter                      3 c. oatmeal

 

Frosting:
1 stick butter                                         4 c. powdered sugar
4 Tbsp. cocoa                                      1 tsp. vanilla
6 Tbsp milk

For bars: in a large bowl, mix butter, eggs, vanilla together. Add remaining ingredients. Press into large cookie sheet and bake for 15 minutes at 350 degrees. Let cool about an hour.

For frosting: Boil cocoa, butter, and milk. Once it begins to boil, remove from heat. Beat in sugar and vanilla. Once the frosting has cooled a few minutes, carefully pour on cooled bars.


Banana Bread 

1 c. sugar                 2 c. flour
1/2 c shortening        Pinch of salt
2 eggs                      3 bananas mashed (add to mix last)
1 tsp milk
1 tsp. soda, dissolved in 1/4
c. water

Directions:

Blend together. Use 1 large baking pan or 2 medium or 4 small.
Bake at 350 degrees for 40-50 min.

 

 Delicious Lemon Chicken

3 lbs. Chicken, deboned 1/4 c. cornstarch
1 Tbsp. soy sauce 1/2 tsp. Baking powder
1 1/2 tsp. Salt 2 c. oil for frying
2 eggs  

Cut up chicken in bite sized pieces and marinate in a large bowl with soy sauce, and salt.  In a separate bowl, beat eggs; beat in cornstarch and baking powder to form a smooth batter.  In an electric skillet or large skillet, heat the oil to 350.  coat chicken in batter and fry until brown.  Pour sauce over and place lemon slices on top of sauce. or around chicken for the enticing look!

Lemon Sauce 

1 3/ c. sugar 1 Tbsp. lemon juice
1 Tbsp. cornstarch 2 small lemons, thinly sliced
1 c. chicken broth
