Delicious Lemon Chicken

 

3 lbs. Chicken, deboned 1/4 c. cornstarch
1 Tbsp. soy sauce 1/2 tsp. Baking powder
1 1/2 tsp. Salt 2 c. oil for frying
2 eggs  

Cut up chicken in bite sized pieces and marinate in a large bowl with soy sauce, and salt.  In a separate bowl, beat eggs; beat in cornstarch and baking powder to form a smooth batter.  In an electric skillet or large skillet, heat the oil to 350.  coat chicken in batter and fry until brown.  Pour sauce over and place lemon slices on top of sauce. or around chicken for the enticing look!

Lemon Sauce

 

1 3/ c. sugar 1 Tbsp. lemon juice
1 Tbsp. cornstarch 2 small lemons, thinly sliced
1 c. chicken broth
